You can make it several different ways, but it is basically some bacon coated in brown sugar and either smoked or baked so that the sugar soaks up the bacon grease. You can mix pepper with the sugar if you so choose.

Try it, you'll like it.

Here is all you need:

Thick sliced bacon
1/2 cup of brown sugar
1/4 teaspoon cayenne pepper

Set up your cooker for an indirect cook with a grate temp around 300° with a drip pan. Lay strips of bacon on the grate above the drip pan for 20 minutes, turn and rotate bacon as needed, season with the sugar mix, then cook around 20 minutes minutes more.

Options: use your favorite rub instead of the cayenne.

I'm guessing you haven't been here all that long... Eventually, you'll realize the voices are really just Willkat.

I'm making pig candy this weekend... it's more than just a little bit good.

Just be careful that the rub does not have too much, or even any, salt.

Oops, You are RIGHT. Forgot to mention that.....

I sometines will reach for Dizzy Pig Raging River or my no-sugar/no-salt rib rub or Jim Goode's Beef rub (which calls for salt to taste, but I omit it and salt the meat if it needs it.)

No sugar/No salt rub
3 tablespoons paprika
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon ground basil
1 tablespoon black pepper
1 tablespoon red pepper
1 tablespoon mustard powder

Goode's Beef Rub
2 1/2 tablespoons dark brown sugar
2 tablespoons paprika
2 teaspoons mustard powder
2 teaspoons onion powder
2 teaspoons garlic powder
1 1/2 teaspoons dried basil
1 teaspoon ground bay leaves
3/4 teaspoon ground coriander seed
3/4 teaspoon ground savory
3/4 teaspoon dried thyme
3/4 teaspoon ground black pepper
3/4 teaspoon ground white pepper
1/8 teaspoon ground cumin
salt to taste
