Default Farkin' Shiners!

I cooked up 6 racks of babys last weekend and at least 2 of them had shiner racks. Still tasted pretty damned good, tho....

Matt--shiners suck, for sure
Some slabs are just really low on meat on the bone side.

Also, there seems to be 2 membranes on spares.
The inner membrane is thin and almost like a clear silver skin.
I try not to pull them both off if I can avoid it.
If you start to pull the membrane and the meat is coming off with it--look for a second thin membrane layer.
Just a thought.

Shiners are areas where the butcher trimmed too close to the bone and the bone shows through. I find them on the center rack in the three-rack cryo from Sam's. Almost like they are hiding them You can see the shiners on the left end of the top rack in BYC's picture.

Gotcha....I think. Actually, two of the racks already had the membranes pulled, which was convenient-- do you think the interior membrane on the spares helps from the meat pulling back more when you cook them? The bone was actually exposed on these before I did anything to them.

Man, there ain't nothin' like the bone shine on the chuck riblets I get from my small neighborhood market. The price is right and the taste is great.....
