Default Anything Butt

How do these sound? Anybody have any better ideas? I'm a little stumped. Last contest I turned in a just plain awesome cajun potato salad and got nowhere. Both of these are pretty good.

1) Jumbo (u9) BBQ shrimp cocktail with a spicy mango salsa cocktail sauce.
2) Handmade Philly Brisket Eggrolls with a Firecracker Queso dipping sauce.

Both sound good. If this is for the contest at Laurie - just know that MOST of the time it is a dessert that wins - or even places in the top 10.

I think the Eggrolls sound good. Something different.
Shirmp, salmon, fish of some sort is done a lot for anything butt.
I've been to one contest that didn't allow shellfish because some people are allergic to it.

It's hard to compete against the desserts unless completely prepared and able to do so. Judges sure seem to love that homemade ice cream on a hot summer day with a belly full of que and some of the most ornate and best tasting cheesecakes I've seen get turned in at BBQ contests.
