broke even. we took 100 bucks between me and the mrs. i lost 60 or so she won 120, and she lost 40 or so plus we had a shiner bock a piece and some chips and salsa. not getting off to a good start. took a nap from about 9pm till 130. had planned on being up at midnight to get started.get the fire goin. and forgot to start monitoring temps so while i was getting chit ready. my temp climbed to about 315. got it down to about 275 now. just put the meat on. and have all vents closed.. gonna watch richard pryor and drink a few cold ones. guess ill be tryin kickassBBQ's quick and fast brisket.

WSM runnin bout 280 top grate brisket sittin about 145 in the flat. looking good. went kinda light on the Grub rub this go around. used one small shaker for the whole brisket. just seasoned the meaty side. left the fat side untrimmed no reason to season it. its not near as dark in color as some in the past. so we will see what happens. just realized though that since im using the piedmont pan w/ water, the pan sits up a little higher.i didnt think about that so i cant fit my lower grate in when i need to move things around and start the ribs. i may do the ribs in the offset. give me something to do this morning. and it is always nice to get the nieghborhood smoked out!!

here it is at 0825 temps holdin 152 internal bout 291 grate temp. not to bad kinda leveled out. gonna wrap when it hits 160. took me a 3 hour nap fixin to head to McD's for breakfast.

Looks good man! That is a big hunk O meat. I bought 2 12#'rs at Market street on tuesday. Wife will get P.O.ed if counts how many I have in the freezer (5).

so thats how they do the 4-5 hour fast cook briskets... Ill never have to stay up 17 hours cooking brisket again..
Fired up the big offset for 3 racks of ribs and 2 drunk chickens and some ABTs. Figured it would be easier than tryin to manuver around the brisket in the WSM plus gives us some beer drinking time.

FatDaddy - I use the Piedmont with water, and if I need to use the lower grate, I set it on the rim of the upper pan. No issues. Also, I used some sturdy wire (the stuff they use to hang ceiling tile grids) and fashioned some handles for the lower grate, so I don't have to climb in up to my shoulders to get the lower grate out while it's hot.
BTW, that is one BIG A$$ brisket!

well the brisket came out at about 215 and was put in the cooler to hold till about 6pm, got the big pit cleaned out and started the ribs at about 1130 pulled the ribs about 530 as well as about 10 ears of roasted corn. 20 min later pulled out the 2 drunk chickens. In my drunken state i forgot to snap a shot of the brisket before slicing. but here are the ribs and the chickens.
Had about 15 people come over most of all the food went. it was to damn hot outside and the fllies were horrible. But the food and company was great. Think my next purchase is gonna be a fan and mister system for the ezups.
