Default CAB Brisket contact made!!!

Well it took me a while and lots of digging... but I just picked up my first case of CAB brisket... 6 of 'em for a total of 83.01 pounds!!!! I thought this was some small place and I get there and it is a HUGE food distributor.

I got to talking to the guy who I was dealing with and he set me up with an account and now I can order all kinds of stuff at wholesale!!! They have about anything I can't think of from the regular stuff to less common things like alligator, frog legs, conch etc. I pretty excited!!!

And BTW the briskets are gorgeous!!!

It was $2.26 per pound... a bit more than I usually pay but from what I have seen from some other brethren it is worth it.

Once you find a nearby contact just start calling. Neither of the ones I found nearby will sell to the general public. One of them called the company I bought it from and set it up. They were very helpful once I told them I wanted to use it in competition.

This is how we also were able to find our CAB connection.They were very helpfull. Have to drive to Detroit to get it but at $1.55lb, it's worth it.

One of our local chain markets features the CAB beef (signs all over), problem is they hardly ever have choice CAB. Unless I'm very confused about this the way I understand the CAB program to work is that they do not stamp the cryovac if USDA says it's select but they do if USDA grades it to choice. So, if I'm gonna use it in contest I want to hedge my bet as much as possible and always get choice CAB. But like I say the market I have access to says they have no control over what is shipped to them and it doesn't come directly to them from their meat packer / supplier but rather from the markets distribution center. I think it's worth the trouble to try and find it but I'm having a hard time at it though. If I'm wrong on the detail above feel free to correct me, but I can tell for sure I have seen CAB without and USDA grade on it and I have seen CAB with USDA Choice on it and I'm talking both brisket and other cuts that were in cryovac. I'm fairly close to Atlanta and the one place I have been told you can always find em is the Restaurant Supply.

I had absolutely no problem with the local (70 miles away) CAB distributer.
I can pick and chose one or more or buy a whole case.
Same policy for butts and ribs.
Last brisket price was $1.97/lb, similar to regular brisket around here.

The only time I have to buy a whole case is if I order something unusual. If I want something like Frog Legs, I have to buy the whole case because there is no ready and ongoing local demand.

All CAB is choice (theoretically the top 20%) or better.
I have never, ever seen a "sub-great" (how is that for a new grade ) CAB brisket or steak or any other cut.

That's the trick....go to the meat distributor/supplier. That's where I finally ended up. I have to buy them by the case, but like I said for $1.55lb it's no problem.

What is Certified Angus Beef ® (CAB) product?

The Certified Angus Beef ® brand is reserved for Angus beef that, after meeting the live specification of being at least 51% black-hided or AngusSource® enrolled, is verified by the U.S. Department of Agriculture (USDA) as meeting the ten CAB carcass specifications:
  1. Modest or higher marbling
  2. Medium or fine marbling texture
  3. "A" maturity for each, lean and skeletal characteristics
  4. 10 to 16 square inch ribeye area
  5. Less than 1,000 pound hot carcass weight
  6. Less than 1 inch fat thickness
  7. Superior muscling (eliminates dairy influence)
  8. Practically free of capillary rupture
  9. No dark cutters
  10. No neck hump exceeding 2 inches
1% of all cattle meet this requirement and that 1% covers only 8% of all Angus cattle. All Angus Prime and the top 35% of Angus Choice are eligible to meet this certification.
