Default • A little more Pasta (pesto)

Been on a pasta thing this week... Made some Spaghetti pesto tonight...

Started out with some sweet basil:


Then added garlic, scotch bonnet & Cashews & blended with some salt black pepper and evoo and a bit of parmesan:




Sauteed up some h/m pancetta while the pasta boiled. Then added the pasta to the pancetta & evoo. I then mixed the pesto in and plated it all up:





Topped it with a bit more cheese and nuts.


All I gotta say is I farkin love a good pesto!

Try that pesto on a panini with grilled chix tomato and mozzarella cheese. It's almost a healthy meal.
