your refrigerator is cold enough, your water hot enough and the floors/walls/ counters easy to wipe down. Do you have a generator? They checked my fridge and water temps when I went. Dawn did mine. Have your disposable gloves in plain view, as well as disposable serving ware, disposable pans, etc. PS - you buy all your salads, right? wink wink, nudge nudge.

I think the only thing we have ever been "dinged on" has been items sitting on the floor (food service items have to be 6" or more off of the floor here).
