Rotisserie roast beef and cheddar sandwich with way too many pictures

I apologize for too many pics. It is, after all, just a sandwich...
But I heard there is this throwdown called GRILLS GONE WILD!



I started with a 2.5# chunk of beef shoulder (no pic)
And soaked it about 20 hours in this mixture.




Covered it with my beef rub and onto the spinner




Till it looked like this.




Rested, chilled, and sliced as thin as my POS slicer will do it.






On to the sandwich...
And another grill.

I toasted a french roll for the sandwich.




Same grill. Same fire. Enter the cast iron.




For some beer battered onion straws.




Same grill, different CI.....
A layer of the meat and some aged white cheddar.




More meat




And more cheese.




ON the toasted roll with some Dukes Mayo.




And warmed indirect on the grill with the onions in place.




This is the pic that makes me hungry all over again! :thumb:




But I'm such a nice guy that I cut it in half and shared it with my wife...




So that's it. Just a sandwich. And a fun day playing with my toys.

Dang that looks good! Onion rings/straws on the grill, that's awesome! Gotta try that sometime, hate the mess and smell in the house.

Oh I think the lid temp was around 350 and it took less time than I thought it would. Maybe a couple of hours. Started with a lower temp and some pecan smoke and let the temp rise to roasting temp. Took it in to rest around 175 degrees...The brine kept things pretty moist and the flavors were all through the meat :thumb:
 
Now that is one delicious looking sandwich.
 
Day-yum, now that’s a sandwich.
Just happen to have some beef thawing in the fridge to make something like this tomorrow, thanks for the inspiration
The deck is covered in snow today. Need to get the shovel out.
Give the garlic flavored “better than bullion” sometime.

Look out now! That is one of the best sandwiches I've ever seen. Only problem is I wish I've could aa tasted it.
