I haven’t posted one of my cooks in a while, so snapped a few pics and put this one together. This is a rack of St. Louis cut spare ribs I cooked this past weekend. I used my Weber "Mini Ranch" 26" Kettle for this cook.

Started with a 3x2x1 snake of Weber briquettes, along with a few Peach and Cherry wood chunks and added a dozen lit to get it going.

I picked of these “Prairie Fresh” ribs at Sprout’s. Didn’t need to be trimmed too much. Looked really good right out of the bag.

Dusted with BPS “Money” rub.

This is about 2.5 hours into the cook. Top vent was wide open and the bottom cracked just enough to get to 250* for the entire cook.

A couple hours later and pretty much done.

Once again, my kettle gets the job done! Using this kettle, along with the snake method, I get really good and consistent results, with minimal effort. I had room for more, but it was just for me, so one rack was plenty.

That is one beautiful looking rack of ribs, great looking plate Jason.

Perfect looking ribs. They don’t get any prettier and I bet better tasting than that.

I love unwrapped ribs - yours look like perfection in my book. The slaw looks excellent too! I have been wanting to make a chopped style like that instead of shredded. Great plate, man.

Nice technique, Nice cook J but......one rack??? Come-on Pitmaster....Trow' a Trifecta of ribs on dat big boy and eat like King Henry VIII for the next couple of days!!!

I don't know if the ribs or your stacking of the charcoal is more beautiful. The mini ranch is no slouch either in the looks department! Great cook and pictures!!

KILLER ribs on a KILLER cooker !!!

Thanks for all of the positive comments, very much appreciated!

haha…I thought about it, but common sense took over!

That looks and sounds excellent Hope you enter the TD

I did, thanks!

I’m curious about whether you used a mop or spritz and what kind. Nice kettle.

No mop, or spritz of any kind, that’s just rendered pork fat glistening in the sunlight!
