For this entry I went back to basics. I air dried these thighs 24 hours for the benefit of the skin. I did minimal trimming, no brine, no injection, no scraping and no seasoning under the skin. The seasoning was a layer of roasted onion powder and a layer of Birds & Bones. These were cooked about 300° as indirect as I could get on my Smokey Joe until the internal was 180°. I had no sides, no garnish, and no plate... I did use a napkin. :twitch:
