Default Mary HAD a little lamb...

It was delicious!

Found some loin chops on sale, never had them before, as I usually buy the other cheap chops.



Seasoned up with some of Sir Porkalot's peppery lime and then threw em in the fridge to marinate for a few hours with some EVOO, salt, pepper, garlic & rosemary. Then onto the Big Joe.



Let em rest for a bit while the sides finish up...



And plate them up with some roasted red potatoes & brussels sprouts.



Almost forgot the chimichurri sauce... No, there isn't a lamb chop missing...

Your chimichurri sauce looks particularly amazing. Did you make it yourself, and if so would you mind giving the recipe?

Nothing I like better on red meat than a great chimichurri!

No real recipe that I follow. Handful of flat leaf parsley, handful of cilantro, 2-3 green onions, couple cloves of garlic, few shakes of oregano (fresh is better if you have some), salt, pepper, olive oil maybe 1/3 - 1/2 cup and vinegar & lime juice. Chop up everything really fine, whisk in the oil & vinegar. Or pulse it in a blender or food processor.

Let everything mellow for at least a few hours. Serve at room temp.
