Default Meaty Question

I keep hearing and reading phrases about ribs about "3 1/2 down" , "4 and up". Can someone please clarify the meanings of these phrases and what is best to purchase etc. Thanks

I believe that their refering to the weight of a rack of ribs. Not babybacks but regular rack weight usually runs between 3 1/2 to 4 pounds in my area.
The bigger the rack, the bigger the hog. Therefore less tender meat.
I normally order ribs by the case here and they always seem to run abt 4 pounds.

Is that weight for trimmed st louis or is the full rack uncut?? Sorry, just wondering.

Same here Kapn.
Thats the weight of the entire rack of ribs untrimmed in the cryovac package directly from the processer. I assume thats the average weight per rack packed 3 racks to one cryovac package. Thats what my butcher tells me.

Yep "XXX and down" would refrence the max weight (i.e. individual racks of ribs) and "XXX and up" would refrence the minimum weight (i.e. packer briskets). You can also qulify further by saying "but not less than XXX" or "more than XXX."
