Latest big knife I'm using is a re-ground 10" chef's knife. $2, Thats right in my wheelhouse.lol
Cheap, sharp, and I can abuse it as much as I want...

Speaking of abuse, I have an inexpensive Chicago Cutlery cleaver and several Miracle Blade cleavers that I bought for $8 each. The CC one is carbon steel and is easily sharpened, and the Miracle cleaver is a work horse.

I got Mercer 10” chefs knife for $14 delivered. If we’re just aiming for decent and cheap that fits the bill.

We like the black grip handle on our Mercer knives (and as others have stated, the price). We have an 11" slicer, 6" curved boning, 7" fillet, 10" chefs and a set of their paring and steak knives. We've owned (and sold) Victorinox and Wusthof knives in the past and feel Mercer matches their quality at a fraction of the cost.

A Purdy shotgun won't kill waterfowl any deader than an H&R Topper, which costs thousands less, but the Purdy can still be a joy to own. That said, I haven't seen anyone with an H&R go into spasms because it starts to rain a bit on their toy while out in the field, and I have seen guys with the multi-thousand dollar arms get all pale because they fear the breeze is getting a little too strong for their Precious. I think it's kind of like that with some of these knives.
