Put a rib roast in a UMAi bag on December 1st and have patiently been waiting for tomorrow. Going to cut it into steaks and cook over a wood fire. Celebrating our New Year's Eve on the 30th as that is the only night my daughter is not working.

As for the cheese in the pics well they got smoked the same weekend
and were ready in time for Christmas.
I should have used the baby cheeses with it being Christmas and all

Looking good! If you get any white mold on the surface you can wipe it off with cider vinegar. I tend to try to minimize the trimmings, because I like that stuff!
 
No pics of the cooked steaks but will definitely do this again. Everyone enjoyed the flavor and the tenderness of the steaks.
