I think I'll do one 3/4" ball valve first and add a second if needed later on. I feel I'll be able to get away from the can as I'm sure once it's settled in I won't need anything other than the ball valve to keep it steady. If it doesn't hold well I'll add a second.

Cook- if you are talking about using the flexible magnets, I'd shy away from those for this application. The bottom of that Jumbo is going to run way hotter than the sides of a UDS- I ran sheet magnets on my drum with a smallish fire basket- and I still melted many a one to the barrel.

I'd do one 3/4" ball valve and use the tin can with holes puched up high for the existing intake. Temp comes up, feather the intake and just run off the ball valve. IF you need higher temps - for crisping up chicken you can open the bottom up some. The can should still allow it to breathe.

I always get suckered in on projects. Love them. I will do a 55 gallon build when we move next summer as I feel we will be hosting people far more often being a few miles from my wife's family.

Those look nice. I'm starting to give serious thought on just nothing the top of the pot. Will have to see. Beauty of being a stainless pot I can just decide when I make up my mind. My UDS I would have to wait when I built it to make my decision due to painting it all before assembly. Maybe not needed but was my preferred method.
