There are tons of these, but I could sure use two or three great ones to make, test, and start to use regularly. In my area they are not available in stores. I prefer versions that are 'typical' of specific BBQ regions and that local Q'rs would recognize.

Thank-you!! I had made up a cider vinegar 'attempt' at Tennessee Red and it was pretty tart. Tried adding minced onion, Plochman's mustard (per a recipe in Smoke and Spice), and got too much in. I'll check out Maurice's and see if I can resuscitate this first failed attempt!

If ya like it sweet use the recipe as is, if ya don't care for sweet, leave out the sugars.
Mustard Sauce 1 cup mustard 1/2 cup sugar 1/2 cup cider vinegar 1/4 cup brown sugar, light 2 tablespoons chili powder 1 teaspoon black pepper 1 teaspoon white pepper 1 teaspoon cayenne pepper 1 tablespoon hot sauce 1 teaspoon soy sauce, dark 2 tablespoons butter Combine all ingredients except soy sauce and butter. Add the vinegar last. Add to your desired thickness. Simmer for 10 minutes. Remove from heat and add butter and soy sauce. Its like a honey mustard sauce, sweet. If you omit sugars, it will not be sweet, but very spicy. |

I am going to give this one a try, I love anything with mustard. I am not a big fan of cider vinegar, I do lover balsamic vinegar.
Can you use balsamic in place of cider vinegar?

Hey, Tommy--Here is another one to try. I think I posted this one once before but here it is again.
Carolina Sauce 1 each big jar of mustard [1 ½ pound] 1 cup mayonnaise ½ cup ketchup 3 tablespoons Worcestershire Sauce 2 tablespoons brown sugar 1 teaspoon Tabasco sauce ¼ teaspoon black pepper ¼ teaspoon cayenne pepper 1 teaspoon kosher salt 1 stick butter ½ cup water Put everything in a pot and bring to a boil. Reduce heat and cook uncovered for about 10 minutes or so, till everything is combined.

OK, one more. This is the kind of sauce I grew up with in south Georgia.
Mystery Bbq Sauce Recipe By :John Bailey Serving Size : 24 Preparation Time :0:25 Categories : Barbeque Bbq Sauces And Rubs Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 each yellow onion -- grated 2 tablespoons butter 1 cup ketchup 1 cup mustard 1/2 cup water 1/3 cup lemon juice -- freshly squeezed 2 tablespoons Worcestershire sauce 2 tablespoons brown sugar salt and pepper -- to taste Saute(sweat) the onion in the butter. Add remaining ingredients. Simmer for 15 minutes or so. Use as finishing sauce, and/or table sauce for pork, chicken, or beef Description: "From Enigma, Georgia" Cuisine: "Southern"
