Default interesting side dish.

Was experimentiung yesterday.. made a side dish that can be a main corse.. for me it almost was.. was pretty easy... dont know what to call it... but here it is...


thinly sliced 3 big spanish onions. Carmelised them in a pan, then put them on the grill on a vegtable grate and let them get some smoke.


Large diced a load of tomatoes from the yard and thru them into a hot pan for a fast stewing. Threw in some oregano, parsley, thyme, sage and basil. Cooked them on high heat jsut enough to heat threw but not turn to mush. Just as they started to break down i added the onions and combined everything, threw in a handful of romano cheese and put them in a half size chafing dish, threw more roamno cheese on top then topped the whole dish with a heavy layer of asiago cheese and another hard cheese we had in the fridge. Think it may have been provolone, but any hard salty cheese will work. You want a semi hard cheese here(not a munster or cheddar). Cover the entire top with the cheeses, edge to edge. Another sprinkle of romano and some more oregano on top and then put it in the chamber to catch the smoke..... i had it in there with the with the prime ribs and briskets for about 2.5 hours. Cheese melted down to a firm layer on the top.. i ate nearly the whole tray over a few hours last night... the little bit left was todays lunch. I'll post this in recipes cause its a keeper.
