One of the reasons I love smoking duck, making gumbo the next day.
Went the simple route, butter, salt and pepper. Into the drum with hickory.

saved the duck fat and drippin's for the gumbo..

Had a little bit of the breast for supper that night...

gathered some of the gumbo ingredients...

went with spicy conecuh this time...

gave the sausage a quick browning. I like the extra flavor of the caramelized sausage..

removed the skin from the smoked duck, shredded the meat and made stock with the carcass..

started my roux with the smoked duck fat and flour...

added my onions, celery, peppers, garlic, cooked til almost tender...

strained my smoked duck stock...

added the stock to the pot, also some okra, the smoked conecuh, smoked duck meat and seasonings...

fried the smoked duck skin til crisp, sort of like smoked duck skin chicharones. :)

I think I could live on this stuff. The crispy fried smoked duck skin chicharones are addicting. :)

That looks fabuliciotious! Duck is one of my favorites and anything creole is awesome!

"that's pretty much it" Wow, anymore and I would drown in my own drool. It's hard to say because you make so many amazing dishes but this one is mighty close to the top of the heap.:clap:
 
Great cook Jeanie! Duck just makes an amazing meal, and a gumbo makes it perfect. FWIW, duck makes for great sausage too!
 
I can only imagine how good that Gumbo is Jeanie, I wouldn't be asking for only a second bowl it would more than likely be a third or forth bowl. :shocked:
You would probably have to ask me to leave because I wouldn't want to stop eating. :wink:
