My thread for submission to the Chuckie TD. I did a take on the Pepper Stout Beef on my PBC.

Costco only had this double pack of Chuck Roast, total weight was 5.6lbs...one was too small so I cooked both. Thanks for looking.

Here's Chuckie


Seasoned with SPOG


On the smoke, took about 4 hours to get to 165.


Meanwhile, sliced peppers, onion, garlic, jalapeño into a half pan


Instead of stout, I added a brown ale...Moose Drool and Worcestershire.


Off the smoke and ready to be wrapped, then at 350 for about 3.5 hours


When fork tender then shred and back into the oven uncovered until the liquid reduces


Then on a ciabatta with Monterey Jack....this will be the official submission.

I hit that. And then hit it twice on Sunday!

If you have one of those little convection ovens, toss the bread and cheese in there to toast and melt a bit. I use the heck outta my little cheapy convection oven that way. Love it.
