Default Butt Reduction

Ok was surprised by my dad who asked me to do some pork butts for his companies party. I bought 2 honking large packages with two pieces in each. One package weighed in at just over 12 pounds and the other 11 pounds. Both were bone in and had a nice fat cap.

After trimming the fat cap and cooking and bone removal. I ended up with barely 10# out of the original 23. Man that is a lot of shrinkage.

Do differnet brands cook differently? I know it is the fat rendering and fat is good, but over 50% seems high to me.

Thats about what I get, sometimes a little more, sometimes a little less. What brand were they and were they enhanced?

I just did 18 lbs of boneless butt, and though I didn't weigh it, I know I only had 9, maybe 10 pounds left.

I normally figure at least 40-50% shrinkage on pork butts.

With your 23# I would have expected about 13# of finished meat...but then I don't trim before cooking - maybe the fat protects the meat just a bit a I get less shrinkage.

I get about 50% yield.
Varies a bit.
Sounds about right to me.

Buy a 64oz can of beans for side dish, and some nice bread for the sammiches.

10# can go a long way, if its just part of the meal, and not the whole thing.

Butt your 50% reduction sounds about right to me.

I very rarely get under 50% loss on my butts. That's is about right bro.

I too could use a 50 percent reduction on my butt.

On topic, 50 pecent is about right for shrinkage on bone in butts. At least that is what I average.

I agree tony....I almost never trim the fat on my butts either...unless there's a real excessive amount. (almost never) . Most of the fat reders out creating a juicy tender morsel ready for pullin'
