Made up a brine with Oakridge “Secret Weapon”, a little salt and brown sugar. Took the 15lber out of the bring last night and put into the fridge to dry out.
Started toasting some bread and sautéing onion, celery, giblets, and some sage for “mom’s” dressing. (for the last 50 some odd years it has been a staple)
Dressing all mixed, added some milk and eggs.
All rubbed up with some more “Secret Weapon” and back for a little more res in the fridge.
Pie out of the oven.
Island Pie:
¾ C sugar
1 t cinnamon
1 t ginger
1/2t salt
15 oz pumpkin
1 evap. Milk
1 C shredded coconut
1 pastry shell
Mix all together and bake for 15 minutes @ 400 and then lower to 350 for about 45 minutes
Do the toothpick test and cover with some toasted coconut
Bird one hour in, holding between 330 and 350
Out of the smoker for a rest
Moms dressing is done
Some homemade potato and cheese Pierogi
A quick sample plate without the corn, salad, or rice and peas
