Had a meat market near by that sold a Teriyaki Pork jerky that was great stuff. Anyone every try to make a sweet type of jerky out of pork?

jerky is usually made with lean cuts, but you can jerky anything from goose to hogs

Use the loin. I make it all the time. I'm lazy, so I have the butcher cut off the outer fat, and then slice the whole thing for me 1/4 inch slices.

grantw is right, jerky is made from very lean cuts of meat because fat will cause rancidity. maybe if you disassembled the muscles, removed any silverskin (if any), and removed all of the fat, you would have good meat for jerky. Or you could just start with a leaner cut of pork.

Let us know how it turns out...
