Default Tropical Country Style Ribs - Lots of Pron

The brine:
4 cups water
1/4 cup Kosher Salt
1/4 cup granulated sugar
2 tablespoons pork rub





The fire:
Large BGE
Royal Oak lump
Cherry chunks
Platesetter
Water pan






Rinse and rub:




Onto the Egg:



Flip after two hours:



165 IT after 3 hours:



Some pineapple juice and a wrap:




Back on the Egg 'til IT hits 195:



Done and glazed:



Served with a tropical salsa, green and red leaf salad and a local IPA:




The beer:




The salsa:

Pineapple
Mango
Fresh corn
Grape tomatoes
Red onion
Mint
Parsley
Lemon zest
Lemon juice
Extra virgin olive oil
Sea salt
Red pepper flakes

I did country style ribs this weekend, and thought they looked pretty good, but this just makes me want to hide the leftovers now. Very nice!
