Default Humprey's wait is finally over

After 8 long weeks she final arrived. After an 1100 mile trip and a late delivery it's here. I am not one to ever buy anything sight unseen, but based on the word around here I took the plunge. I have been following these smokers since the very first posting about the battle box coming out. I knew then that these were the real deal and that this what I would have one day.

Went with the drop in pan and the heat diverter. Not being a water fan in the WSM I was a little unsure which way to go. Today's burn out produced no steam in your face when opening the door and no boil in the water thanks to be heat diverter.

After a few hour burnout I had to put something on. So on went a fatty stuffed with sautéed vidalia onion and mushrooms and some SM.

Stayed locked on what ever temp I dial in starting at 225.

There have been some comments about the shallow coal basket. This was actually a great feature. After I was done, I shut it done for about 30 min and they were no longer red. Still hot, but the shallow pan made it very easy to use my coal shoval to scoop them out clean. Left the door open and was able to take the pan out in an hour or less. Was practicing how it would be to load back up after a comp.

As many others have said, this a purchase I have no regrets what so ever with. Looking forward to many cooks with it.

Jeff,

You are going to love the Humphrey's.!!!! I too purchased mine sight unseen and have NO regrets in any manner.

Don't be fooled by the shallow charcoal tray. An eight pound bag of lump charcoal will burn close to 14 hours for me at 250°, can't ask for anything better for my purposes. You may find that the Humprey's performs best with lump charcoal. Lump burns hotter and leaves less ash deposits to clean up...

Also with the water pan in place and full of water, there is no steam to hit you in the face. Being it is a reverse flow design, the airflow of the cooking chamber is downward to the exhaust. The moisture simply exits with the airflow, I have never had steam or condensation in my Down East Beast...
