Default Stuffed Chop on the Yoder

Decided to put the Yoder to use this evening for dinner.

I started off with a bone-in loin chop and stuffed it with Goat Cheese, Cranberries, Spinach, Basil, Prosciutto and Capocola. Then just seasoned with some salt and pepper.

Onto the Yoder it went. I also chopped up some Butternut Squash, Zuchinni, Portabello, Sweet Potato, Red Onion and Peppers and put those on the cooker. Here it is taking a little rest.

I decided to make a sauce out of a little Butter, Chardonnay, Creme Freche, Coarse Ground Dijon Mustard and some Salt and Pepper.

Plated up and ready to eat. It was mighty tasty. Enjoyed it with a glass of the Chardonnay used in the sauce.

Am I the only one that thinks that last pic looks like a frog chewing on some kale?

Great looking chop, BTW.
