Got a used cvap this unit has two drawers I know the capabilities of this machine but was wondering when I hold items such as brisket, butts, ribs do wrap the meat up in butcher paper, foil, plastic wrap. Since I will be using six inch hotel pans will stacking meat on top of each other help me or hurt the product????

I'm guessing no one has done that.
I looks like you will have to do it and report back.
I would use butcher wrap, and have no probs stacking.
As long as you are within safe temps, I see
no problems..collect the juices..
