I would also suggest chicken halves, however, you could be a crazy MF and go right to brisket! I did ribs and chicken on mine for first cook and was very pleased. I am however, moving on to a stick burner and will use my PBC for chicken and as a back up for pork butts

Nobody is "downgrading" the PBC. The question was what should be the first cook.

I'd go with chicken halves too. You can use the hooks, it doesn't take long to get the result and it turns out great.

I'd suggest to check the IT after an hr or so until you can see your preference for getting it started. I followed the instructions exactly and it was way too hot for me for me so I had to tweak it a bit. Now that I have it down its set it and forget it.

The PBC came too late to cook yesterday. It took me longer to open the box than it did to set it up for today. What a beauty. I am going with chicken first but I think that I can do a fatty after the chicken. From what I've read the temp should stay up for several hours.

Several hours? You should get an EASY 7-8 hours... heck, load the charcoal bowl to overflowing, and you'll probably see an EASY 10+ hours! :-)

Congrats on your PBC. You are going to LOVE it!!! I have had mine for a little over a year now... and EVERY TIME I cook on it, I am blown away by 2 things... ease and results... oh yeah, and the smells that come through those little top vent holes :-)
