Default Yoder YS-640

For those that have a pellet smoker ? what do think?
I just got my YS-640 and Im in need of some pointers.
1. I cant seem to get this thing holding a temp
30 degree fluctuation
2. the temp gage on the smoker reads one thing and my MT-733 reads
Standard setup, with heat plate installed and baffle pushed in towards the fire pit 6 inches like instructions suggest.

How many times have you used it? I know sometimes the temps will swing at first then settle down a bit with a few uses. And what pellets are you using?

The controller readout won't always match your Maverick. The controller displays a rolling average, not an instantaneous temp. It controller does take temps every few seconds, but displays an average.

Give it a little time. I have heard guys on other forums with this same complaint before. But after a few cooks and when you trust the cooker to do what it does, you are in for some good eats.

I own a traeger, I'm sure it's the same concept..... In decent outisde weather it holds temps really well. It does flucuate every few minutes when it cycles through the pellets. For instance I have it dialed in at 250 and every 5 minutes it will feed more pellets and the temp will drop to 235 or so. But then back up. It really doesn't vary much and the food still tastes good.

I've had my 640 for about 3 weeks now and I've run it 4 times with only 1 problem. And that was my fault. Last Sunday, I started the 640 and walked away without making sure the fire had started. It hadn't and when I came back 30 minutes later, I couldn't figure out why the chamber was cold. Since it was super windy, I thought that the wind might be slowing the heating up since that had happened with my old Bandera, so I went back inside for 30 more minutes. Once my mind figured out that the fire hadn't started, I had a pile of pellets to clean out of the 640.

As a note, I believe the baffle needs to be all the way over to the right to get an even temp across the whole smoking chamber. So if your MT-733 is reading on the right hand side, then it will definitely read a lot lower. When I've got the baffle on my 640 open all the way to the right, my Thermopen is within 4 or 5 degrees of the displayed temp when I put it in the probe port on the right hand side of the chamber.

I have noticed that at the start of a smoke the temp will fluctuate a bit. For me it's only been about 10 to 15 degrees. Once it gets going, about 30 minutes in or so, my temps have been solid. Only varying a few degrees either way.

Tom, the YS640 thermocouple is "Calibrated" for mid center of the chamber. if you place your probe near the thermocouple, it will read much different.

Also, after you load your food, leave the door shut. It stabilizes in 30-45 minutes.

And, due to the heat deflector opens on the right, it will be a bit hotter.

Problems? No. I take delivery of 2000#s of pellets tomorrow.

I'm having similar issues holding temps. I've used it about 30 times and I see 30-50 degree fluctuations every time. Wind/cold etc does affect temp swings but even on warm, no wind, days I see the same temp swings.

I'm in the process of working w/ Yoder - they sent me a new temp probe that I need to install. Hopefully that does the trick.
