Anyone have a thread on it. I need to get one done.

I have done many venison hind quarters, I would think I could do it the same way.

Ahh I see, but why not just leave the bone in?
To me it adds flavor during the cook

First try at brine curing and dont want to have to worry about bone sour if I dont inject it right.

I would think if you injected well around the bone there wouldn't be any issues.

I've done it a few times.. always a pain. I think I watched that video as well before I did it. I want to get one of those hook things to hold onto meat, to keep hand away in case I slip with the boning knife.
