Default Birthday Babybacks(almost)

I turned 54 this past Saturday, and had planned to cook a brisket to celebrate. My family had tickets for a local community theatre production, so we ended up going out for supper before the show. I had to content myself with 2 racks of babybacks and some baked beans in the UDS yesterday.

The ribs were seasoned with a light application of Black's BBQ rub that we got in Lockhart last July, with some added fresh ground black pepper. The Black's rub has a lot of salt in it, so I chose to take it easy.

I also decided to try some baked beans in the in the UDS. I took a can of Heinz Beans and pork in molasses, added sauted chopped onion and jalapeno, 2tblsp store bought bbq sauce and 1 tblsp chili powder, then popped in the UDS for a couple of hours.

The ribs were in the UDS for about 5.5 hrs. over Basque's Nature's Own maple lump, with chunks of oak from bourbon barrel staves. The temp was a little low for the first 2/3 of the cook so I'd go hotter next time( I usually do).

Served up with baked potato, broccoli salad, and baked squash. Thanks for looking.

By request from Brother Ironmanerik:
Broccoli Salad recipe:

3 C broccoli florettes
1/2 C diced red onion
1/2 C sunflower seeds(shelled)
1/2 C raisins
1/2 C crumbled feta cheese
Combine in bowl

Dressing:
1/2 C low fat plain yoghurt
1/4 C light mayonnaise
2 tbsp. granulated white sugar(next time we're using 1 tbsp. - the raisins are sweet enough)
1 tbsp. lemon juice
S & P to taste
Stir dressing ingredients in small bowl
Pour into salad ingredients
Refridgerate at least 2 hrs before serving.
