Default Upside Down Chorizo Burger Burger with butterflied Weiners!

4lbs of ground beef and 1lb of chorizo from my favorite little meat market.......I love their ground. Lots of T-bone, 7 bone in it.

Folks went out to a little town called, Canutillo to buy some fresh eggs from a lady who sells em all year long. Duck eggs too. One of those light green ones made it into the burger.

Pickled some onions in pickled pepper juice.

I got all fancy on it. Butterflied hot dogs!

Spread for the buns. Mayo, ketchup, siracha, and chipotle/adobo sauce.

Vigilant, child labor!

Getting there. Roasted a penos.

Fancy wieners!

Asadero cheese applied by previously mentioned Child Labor Boy!

Feeding the Child Labor.

Dinner for Dad Labor.

I had to attack it from the top down.

It did not suck!
Thanks fer lookin!

Looks great. My BF and I love ketchup on our fries and have more than once discussed how fast food joints don't automatically give you ketchup when you order fries--sometimes we forget to ask for it and it annoys us to have to eat the fries naked. We both feel that it's mandatory--we just don't understand.

That's an old 18.5 Smokey Joe Platinum with that messed up vent design Weber came up with where they are located on the side and above the coals. I love that grill. Gotta keep the lid open so the coals get air flow, but it's a champ.

I eat my fries with mustard.............BUT I was already attacking the burger and the ketchup was there and it added some color and I was too lazy to go get the mustard. So, ketchup it was.

Nicely done Bob! I gotta go make a trip to the Mex market for that and some cheese soon!

Hey if you want to add a pot to that JJ i found a stainless pot that fits it great. It's better than a wsm and is still a grill of course.

Edit...oh thats not a JJ huh? Make a chacoal basket for it....it will perform way better.
