Default a bunch of questions but ill start with this

hey guys, im new to this "sport" and already want to build a uds. im going horizontal and use indirect heat ( coals to one side ) i read a couple of times not to let the coals touch/rest against the drum. is this because of airflow or ashremoval or something other ?

http://www.bbq-brethren.com/forum/sh...ad.php?t=23436 You can find a ton of info here. Just a heads up, you posted this in the food catering section. Probably should have been in q-talk and I'm sure the Mods will move it shortly.

When your coals touch the side of your smoker, you lose a lot of heat. Imagine touching a hot cast iron skillet compared to holding your hand a couple of inches away.
