The quote says guac cream sauce but I wonder if it was really more just like an avocado crema instead so much more subdued flavor and thinner viscosity nothing like guac. I could see where that would pass muster better and balance out the smokiness. And I've done ABTs with tiny salad shrimp in them. Salmon wouldn't be over-bearing. Really sort of like a lox and cream cheese bagel in an ABT instead. Avocado would be a complementary flavor to that IMO.

Yeah, an Avocado crema might work, but Guacamole would be too thick. I still like a little ranch with mine...
