Default First Time Caveman Steak

First attempt - using three Contra Filet steaks, and a mix of lump charcoal and Eucalyptus wood embers. I have rubbed the steaks with my smoked salt recipe, and am burning down the embers now.

Should I rub some olive oil into the steak or not? Slightly concerned about ash build-up on the steak (the larder is bare, so if this doesn't work, we are going hungry today!)

Yes - I suspect it will burn too fast, but I am fairly limited here (without chopping down some protected hardwoods!)

it's the normal Pizza oven wood here, so I had some around, but we just dont have much in the way of hardwood for burning here..(legally)

Will see how it goes and report back shortly

I just rub my steaks or chops (Works great on lamb too...) and let them air dry in the fridge overnight. I don't oil them, just place them directly on the coals. Last time I started a chimney of wood chunks instead of lump on top of unlit coals and put the chops on when they looked like this:

Ok, that worked out well - no ash stuck to the meat, which was a worry before I started. The meat had a fantastic taste, and with a thicker cut of steak, it would come out really nice! As it was, I will chalk this down as someting to do again.

YES!!! I too was worried about ash the first time I tried. You're right though, they do cook fast!

Yep no ash I love it. I do it all the time when i reverse sear... looks AWESOME

IMO cooking with eucalyptus is not the same as smoking with it.
