Default cuts of meat for LEAN ground beef

well, I got an omega 8004 the other day and it grinds chicken and pork like butter with it's auger and now I wanna move on to beef. only problem is with so many cuts what's a good cut for LEAN ground beef. due to health reasosn I tend to get 93/7 or 96/4 lean to fat ratio at the grocery store. just not sure which cuts of meat would give me that fat ratio (ish) when I grind on my own.

Eye of round roast or steak
Sirloin tip side steak
Top round roast and steak
Bottom round roast and steak
Top sirloin steak

Go with select (if available) or choice as they will have less fat than prime.

nice, I can get round steak both top and bottom for really cheap up here so I'll give that one a try... same with top sirloin so I'll give a gander next time I'm out shopping

We look for all of those on sale and stock up when we need to. I'll grind it, place in 2 quart containers ( 2 lbs. coincidentally) and freeze. The next day I'll pull the meat out and put them into foodsaver bags.

For burgers and some other dishes I like a little more fat/flavor. For a casserole or taco meat the lean meat rarely has to have grease drained off.

anything that comes off of the rear quarters will be lean, use front shoulder if you are wanting to add more fat(and flavor), neck meat BTW is very flavorful.

I ask the meat guy why there was never any top round in the case only bottom round. He said they grind up the top round for burger. Then have to add fat because it's to lean.
