Default Second try at sausage (pr0n)

My wife picked up a 9lb picnic Friday so I turned it into sausage. This time I chilled the meat in the freezer for 3 hours and the meat grinder. It ground much more easily and went a lot quicker. It started to smear once so I stopped the grinder and looked inside and there was fat wrapped around the blade. Once that was cleared it worked well. I made breakfast sausage and kielbasa. The breakfast sausage is a bit salty so I'll have to adjust the recipe for next time.

Thats some good looking sausage! I spent my sunday making my second batch of sausage. I used natural casings this time, I liked them a lot better.

Found a place near me that sells natural casings for a decent price. I figure I finish the "unnatural" ones and then get those and try them.

Hey that looks really good! I just got a meat grinder the other day for $219 at Academy Sports : LEM #5.

I ground up a pork butt for ground pork, breakfast sausage and hot italian sausage. Both sausages turned out okay but I am fine tuning them. I'll share those two recipes when I get them worked out.

Could you share your breakfast sausage and kielbasa recipes? thanks!

Our ol' grinder was complaining pretty bad the last time I used it so I picked up one of these last week at Northern Tool for $99.99. They'll honor their on-line pricing at their stores. I haven't tried it yet but have high hopes. It's the cheapest one I could find with metal gears. Reviews are pretty good. Definitely not a LEM but maybe a close second?? The recipes are from the book Charcuterie so I'm not sure I'm allowed to share them. I love the book though.
