Default new test on stainless steel portable pizza oven

I add lining of 1" inch thick by mud and high temp. cement.
On bottom I use a pizza stone.
I baked bread directly on the pizza stone.
Pizza stone was too cold, bottom side of bread was nearly uncooked raw dough.
Then I made a stainless steel plate of thickness of 5 mm( a little smaller than 1/4" inch), and with 4 legs of 20 mm ( 3/4" inch)
Also there is a wall of 80 mm(3" inches) on the plate, which faces the fire.
It prevents flame to sear/burn dough directly.
I place bread dough on a pizza pan and pizza pan on 5 mm plate.
Result is great, both sides of upper and bottom are light brown.
But I spray too much flour on the pizza pan.

insulated/lining by 1" inch mud

also add stainless steel plate of 5 mm thickness

baked bread on pizza pan
570F to 610F for 20 minutes

Both sides of bread are light brown
