Default Christmas Dinner Pron

I cooked Christmas Dinner for the family on my own:
-30 Day Dry Aged 'Prime' Rib Roast (4.5 lb[Rub-EVOO,Salt,Pepper,Garlic,Thyme,Rosemary,Oregano) - Reverse Seared in smoker (unknown wood, just used what I had laying around). 220-240 for 2.5 hours 'till ~120F. Rested 30-40 minutes. Finished in Convection Oven at 500F for 5 minutes.

-Roasted Root Vegetables

-Maple/Cinnamon Pumpkin

-Balsamic Brussels Sprouts with Cranberries & Pecans

-Mashed Cauliflower
