Great looking butt. I use my Kettles for smaller cooks all the time, including doing a single pork butt. I tend to cruise hotter at 300-325 on my long cooks. I have noticed though that on the kettle you will get a smokier flavor so I use smaller piece of wood.

Be careful with the bone. Cooked bones dry out and become more brittle and are subject to splintering. They can do real damage to your dog.

That looks great! I'm with you, as far as liking less smoke flavor. You may want to try a little higher temperature, that'll tone down the smoke.

I cook butts on kettle all the time. Using the snake method I maintain a temp between 280 and 300 without touching a thing for 7 hours. I only use 2-3 wood chunks because as everyone stated kettles seem to get a lot more smoke flavor.

Looks really yummy! Have you tried Shack Attack sauce? That's my favorite sauce for pork butt.
