Default Gearing Up For The Brisket Challenge

Stopped by our local restaurant supply a few minutes ago and picked up a 10 pound packer brisket. Off to Hobby Lobby for a roll of butcher paper and then a sack of pecan mini logs from Academy.

Looking to cook either Friday or Saturday following the KISS method. I'll post photos. Happy Thanksgiving to all!

I use the same exact paper from Hobby Lobby.

It was probably less expensive to buy a roll at Sams, but figured 50 feet ought to last me for some time.
