Default Smoked Pork Butt Green Chile Stew

It is getting cold and actually had some flurries today so decided to make something to warm the bones for dinner.

I started with this


I roasted the anaheims (sorry for the fuzzy pic)


I chopped up the peppers and onions and sautéed them in a pot with a bit of oil and the garlic. Then added the chicken stock and the pork.


Once that had simmered a bit I added the potatoes and some cilantro.


I let that go for about 30 minutes until the potatoes were done. Warmed up a few tortillas and it was time to eat.




It was pretty darn good. I had to stop myself after two bowls.
