Chitterlings are good boiled with s&p and a bit of Louisiana hot sauce on the side. Clean them properly and you will have a true soul food delicacy.

Had them boiled twice. Meh.
Had them in a Korean Restaurant, pre-boiled, then grilled! and cut into bite sized pieces...Oh yeah, baby!
