Default Pain in the membrane, does this happen to you?

Picked up some baby backs from costco. I was prepping them for first ribs on the wsm tomorrow . When I was trying to pull the membrane off the back it just kept breaking. In the end I was not able to really pull off. I used the butter knife knapkin method.
Suggestions? Have you met a rack that didn't cooperate?

Sometimes that happens with a really thin membrane, but even then you should be able to get most of it off without much trouble. If you're left with a section on the end that has a small amount of thin membrane you just can't remove, cross-hatch it with a paring knife and leave it.

I've dedicated a pair of needle nose just for this purpose. I don't have the grip in my hands I used to. I think people also use fish scalers or somthing like that also?

I dont bother pullin em any more. They really dont bother me. I score em in a diamond pattern and cook em up. But if they but you, or its a comp thing you could try something like canvas pliers. Should make it alot easier.

Great idea there westy!

I have had racks like that, I now make sure the racks I buy have a good thick membrane on them. I look for more of a fatty back to them, this most all the time has a thicker membrane.

It could be that the membrane already was removed. Costco generally does this. Sometimes there is a small piece that didn't get pulled, but I can't remember the last batch of Costco BBs that came with a membrane -- it's been years! I'd guess that's why you're having so many problems and why it keeps breaking on you -- it's actually submembrane tissue you're pulling.

You guys beat me to it. I've cooked a lot of BBs from Costco in the last 3 years and can't remember the last time I had to pull a membrane.

Membranes aren't a problem I leave 'em on cook bones down at 300 it all but disappears an what remains is totally bite through and your ribs are juicer

I realize this was probably solved with the info about Costco selling ribs with membrane already removed, but wanted to add my 1/2 cent.

I've gotten to the point that if a membrane is giving me any sort of trouble using a paper towel to rip it off, I just grab the knife and score it. Sometimes, I'll score between the bones, sometimes I'll do it cross cut.

Used to use a paper towel, but an old tee shirt works better for some reason.

I cook mostly spares. I have gotten them from Sam's and Costco. They both definitely have membranes. I usually have no problems removing it from Sam's ribs, but I have to struggle to get it off of Costco's ribs. I has happened multiple times, and I have no idea why. Because of that, for competitions, I will not use Costco's ribs. i do use them when I'm just cooking for myself if they are cheaper though.
