Default Leg of Lamb

Sunday dinner leg of lamb....here's how it went down....

Bought a boneless leg of lamb from Sam's Club on Saturday....



Trimmed some of the harder fat, studded her with garlic and threw in some rosemary to rest. Before I wrapped it up to Sunday, I coated with olive oil and salted the outside a touch.



30 min prior to cooking, I trussed her up and made a mix of finely chopped rosemary, thyme, and added in salt, pepper and olive oil. I rubbed the mixture over the outside.



That went on the performer at 325...with cherry for smoke...I



This was 30 min in...



About 1 hour in, I added some root vege (parsnip, rudabega, potato, carrot) and brussel sprouts to the pan to cook under the lamb. And a naked fatty, cause, well, why not.



I also baked some bread....





The vege continued to cook while the lamb was resting, I pulled it at 125 internal...



Everything's ready, time to slice the lamb...



The table....

Wow, you are definitely back to cooking! Looks great! I have not tried to make lamb yet but this is making me want to!

Overall, it was received positive reviews from the crowd. Here's my breakdown.

Me - loved it
Wife - liked it, but maybe not quite as much as me
Mom - loved it
Dad - loved it
Son 1 - loved it
Son 2 - wanted to put ketchup or bbq sauce on it to eat it. He's 6 and would eat ketchup from a bowl with a spoon if we'd let him.
