Default Big Boar Loving Gravy!

First you have to start with the Big Pig! In my case it is the Big Boar!
Attachment 86536
The butcher hooked me up with some Country Ribs from the Big Boar
Attachment 86537
The bacon will enter the scene soon (another boar donor)
Attachment 86538
Went with The Oakridge BBQ Santa Maria Rub - Thanks KC Mike!
Attachment 86539
Attachment 86540
On the grill with some Pepper Bacon on each one
Attachment 86541
Cooking up nicely
Attachment 86542
Stacked and foiled to gather the juices and make sure it was tender
Attachment 86543
Plated with Cheesy Scalloped Potatoes, Home canned corn, and a biscuit.
Attachment 86544
The rub is awesome and gave it a bit of a kick

Half way through decided to double down and smother this with Gravy also.
Collected the drippings from the foiled pork using the pan from grilling up some garlic
Attachment 86545
Started with melted butter and added onions
Attachment 86546
Then added some mushrooms
Attachment 86547
Corn starch and water
Attachment 86548
Some home canned chicken broth
Attachment 86549
Mixed the corn starch with the drippings
Attachment 86550
Added the chicken broth to the onions and mushrooms
Attachment 86551
After bringing to a boil, added the drippings and corn starch mix
Attachment 86552
Bring to a boil again while stirring and BAM, we got Gravy
Attachment 86553
Added some grilled garlic and poured over the pork
Attachment 86554
It was very good - I ate the whole thing!
Attachment 86555
Thanks for looking! SD

I had to look it up but yes it was a Barrow. He has 800 acres with wild pigs but all the males are castrated so he can sell hunts without season and game rule restrictions. You still need to hunt them and they still have some mean pigs but I think the mrat is better. This guy tastes mighty fine!
