Default Short Ribs!

Been a while since I posted a cook, figured I'd break out with this....and post in the gravy throwdown too!

Here goes.....

Short Ribs, seasoned with Kosher Salt, Black Pepper and granulated Garlic.



Then it farkin hailed....



Back to our regularly scheduled program...



While the coals were going, I chopped up carrot, onion, celery and threw in some thyme....



Short ribs get a char



Vege goes on with some pats of butter...



Performer is cruising along...



The vege gets veal stock with red wine, bring to a simmer and the ribs go in the pool....



Ribs are close to done, time for a rest...



More thyme and the liquid goes for a simmer to reduce for the gravy...



Plated....





So tasty...

Same here. It's raining a little as I type but my 14.5 WSM is still holding 280°.
