Ham and bean soup

it's starting to feel like fall around here, so it's about time to start making some soups and stews...
I cured some country style ribs with tenderquick, some freshly ground cloves, allspice, paprika and black pepper for about 4 hours, rinsed them, and left them in the fridge overnight. Meanwhile, I soaked about 2 lbs of beans.
Got my DO hot, and started with some bacon grease, then leaks, garlic, carrots, bell pepper, and sweated all that for a little while. Then, in went the beans, a couple bay leaves, some salt, white pepper, and enough home made chicken stock to cover.

Then, the DO went on the lower rack of the WSM with the meat above over RO lump with some cherry, and a handful of hickory chips

let that go for a few hours

then chopped up the meat, and into the pool along with the bones

Let it go for a few more hours until the beans were tender
all that was left after that was to convince my helper to come back in...he was enjoying the weather a little

served it up with some nice crusty bread, and it was a great meal :biggrin1:

Thanks Jeanie! the pork was really good...the hard part was getting any of it into the pot before we ate it :oops:

I'll do ham and bean soup in the middle of Texas summer. Yours looks killer.

I grew up eating a ham and bean soup very similar to yours. It's what my family did with the leftovers from a big Christmas ham -- bone and all. I like the way you made yours. I'm sure it had lots of hammy flavor to it.

Damn sure is. Sat at a football game tonight and it was pretty cool. Frost on the car this morning.

Looks delicious. I've been waiting for it to cool down before our soup season kicks in.
