I make these a lot when camping. Another easy meal.
Soaked the pintos overnight then put them on the fire after breakfast and let them simmer all day.
Brushed the rack of spares with bacon drippings, seasoned with a bit of salt and pepper. Then put them on the low heat side of the fire.
Rotated and flipped the slab about every 30 minutes for even cooking...
added a log of wood when needed.
Sometimes I foil after getting some color on the slab but I kind of like more tug to my ribs so I didn't this time. I like campfire ribs kissed by the flame.
The ribs took about 6 hours to get the pull back that I was looking for.
I did brush with a spicy Q sauce at the end of the cook.
I almost forgot to get a plated pic.
