Spares and beans on the campfire

I make these a lot when camping. Another easy meal.

Soaked the pintos overnight then put them on the fire after breakfast and let them simmer all day.

Brushed the rack of spares with bacon drippings, seasoned with a bit of salt and pepper. Then put them on the low heat side of the fire.

Rotated and flipped the slab about every 30 minutes for even cooking...
added a log of wood when needed.

Sometimes I foil after getting some color on the slab but I kind of like more tug to my ribs so I didn't this time. I like campfire ribs kissed by the flame. :)

The ribs took about 6 hours to get the pull back that I was looking for.

I did brush with a spicy Q sauce at the end of the cook.
I almost forgot to get a plated pic.

They look good, I've never done them that way, but next time I'm camping, I'm doing that.
 
Just looking at your posts is very relaxing and enjoyable Jeanie - you are most definitely doing it right! I would love to try doing open pit ribs one day - your ribs, and the whole meal for that matter, look fantastic! :clap2:

As a lifelong camper, I have to ask, is this campfire cooking done at home, or away from home? If away from home, what kind of camping do you enjoy?

I backpacked into the wilderness as a young man. Now I either sleep in my home-made teardrop camper, or tent camp close to my car. I still like to go minimal.

I'd love to know how you camp out.

Thank you CD, this was at a campground. I take my tent and tractor rim for cooking and campfires. The govt shut down closed the park so everyone had to leave early.
When camping at my favorite small lake, I take my sleeping bag. There are no hookups at the small lake so nobody goes there but me.
I enjoy the quiet!
 
We all love our smokers and grills but geting back to the good ole camp fire is as good as it gets!

Great cook out for sure with superb food and that fantastic view.
Never tried open pit ribs, now it has moved to the 'have to try soon' list!

The only thing I see wrong is the pictures, is that you need a bigger knife to stir the beans!
