You will need Dessert!!! This isn't fancy but it fits the season and mmmmmmm is it good!!! (imho)

Pumpkin Gingerbread
(NOTE: this makes two loaves so cut the recipe in half if you only have one 9" pan, take that from someone who only has one pan and didn't read the directions completely the first time through)

INGREDIENTS:
3 cups sugar
1 cup vegetable oil
4 eggs
2/3 cup water
1 (15 ounce) can pumpkin puree
2 teaspoons ground ginger
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1 teaspoon ground cloves
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1/2 teaspoon baking powder

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf
pans.
2. In a large mixing bowl, combine sugar, oil and eggs; beat until smooth. Add water and beat
until well blended. Stir in pumpkin, ginger, allspice cinnamon, and clove.
3. In medium bowl, combine flour, soda, salt, and baking powder. Add dry ingredients to
pumpkin mixture and blend just until all ingredients are mixed. Divide batter between
prepared pans.
4. Bake in preheated oven until toothpick comes out clean, about 1 hour.
5. Depan and let cool for a couple hours and drizzle white icing over the top!!!

Ok, now we all know you can cook and smoke.........and to feed a 19 yr old does require some volume

You said you have a brisket to do, there's just so many tasty ways to use it after day one.
I'd be thinking of some type of hash with some of it. A good filling meal right there.
And then some stew with the rest.
What's your sons favorite that the missus doesn't care for?
What's yours?
Go for those two and that'll cover a couple days.
Those Cuban style ribs in the recipe section I did were amazing. I'd give them a go as I know I'll be doing them again. With black beans and rice that'll even fill the young'n up

EDIT:by the way these are only the first cup of coffee thoughts.....now my head hurts should have waited until the second cup....

Smoke some tuna steaks. Cool. Flake. Make a savory dill relish based tuna salad (Tuna, chopped Vidalia, Mt. Olive Kosher relish if you can find it, regular dill relish if not, a touch of chopped fresh dill, squirt of Dijon, sour cream and Dukes mayo - measurements by eye depending on your tastes and amount of tuna) and serve with some excellent crackers (Plenty of those in Florida, I heard...) and thinly sliced tomato. Smoked gouda is a nice cheese to pair it with. Healthy, good for you, and delish.

The brisket should make multiple meals, and you need to include ranch style beans and potato salad. I would also grab a bone-in turkey breast, inject it with Creole butter and put Tony's Creole seasoning on the outside and smoke it. It is so good that you might not have left-overs. Tacos using the Old El Paso seasoning packages and taco shells sever me well as a quick, but good, meal.
