If you were able to maintain your temps within a 30* range, you done good Mike! 30* range is great on a non sealed cooker and will not ruin your cook in any way as proved by your outcome.

Those look great.

I like doing ribs on my kettles, but I find I have to fiddle with them a lot to get the temps right. It's a labor of love, for sure.
